The Bristol Bake Off
16th - 23rd September
The Bristol Bake Off is all about cake. Its all about making, selling and enjoying a little treat for a a good cause.
A bake sale is a great way to raise money for our hospitals, so come on Bristol, get your aprons on and delight your friends or work colleagues with some home baked delicious goodies.
We have collection tins, buckets, t-shirts, posters and lots of recipes to make the most of your cake sale.
All you have to do is:
1. Set a date for your bake sale.
2. Ask a few friends to help you.
3. Choose your recipes. Cupcakes, lemon drizzle tray bake, flapjacks, cookies or why not try our Above & Beyond easy peasy Victoria Sandwich and cup cake recipes?
4. Tell everyone: Email, tweet and talk about your cake sale. We have The Bristol Bake Off posters for you to advertise your event on noticeboards.
5. And finally....have fun baking, selling and raising funds for a brilliant cause.

Recipes to try:
Above & Beyond Cupcake
Preheat oven to 170c / 325f /gas mark 3
150g Plain Flour
2 tsp baking powder
pinch of salt
125g Caster Sugar
125g unsalted butter (room temperature)
2 eggs (room temperature)
2 drops of Vanilla Extract
2 tablespoons of milk
The easiest way to make these is to pop all the ingredients in a food processor except the milk and whisk until combined. Then add milk.
Pop into 12 cupcake cases and bake in the oven for 20-25 minutes or until golden and springy to the touch. Leave to cool in the tin for 5 mins before transferring to a cooling rack.
250g of Icing sugar (sieved)
80g unsalted butter (room temperature)
A couple of drops of Vanilla Extract
A couple of drops of food colouring
Sprinkles (Hundreds and Thousands are the best)
Beat or whisk the icing sugar and butter together until it looks like sand. Gradually add milk and vanilla extract and whisk until soft and fluffy. The more you whisk the fluffier it will get. Next, add the food colouring a drop at a time– pastel is prettiest. Either spoon generously on top of each cup cake or if you want to be really fancy use a piping bag. Top with Hundreds and Thousands.
The Above & Beyond Victoria Sandwich
175g Unsalted butter – softened
175g self-raising flour
1tsp baking powder
3 eggs lightly beaten
175g golden caster sugar
1sp vanilla extract
Heat the oven to 180c/fan 160c/gas 4 and line two 20cm sandwich tins
Use an electric mixer or a food processor
Sift the flour, baking powder into a bowl. Add the butter in knobs, eggs, sugar, milk and vanilla.
Mix until combined but take care not to over mix
Place into tins, level the mixture and bake for 20-25 mins until the cake springs back to the touch.
Remove from oven and cool
Fill with a strawberry or raspberry jam and either a vanilla buttercream or double cream you have whipped into a frenzy
Sprinkle with icing sugar
