Makes 12
Preheat oven to 170c / 325f / gas mark 3
Ingredients:
150g Plain Flour
2 tsp baking powder
pinch of salt
125g Caster Sugar
125g unsalted butter (room temperature)
2 eggs (room temperature)
2 drops of Vanilla Extract
2 tablespoons of milk
Method:
The easiest way to make these is to pop all the ingredients in a food processor except the milk and whisk until combined. Then add milk. Pop into 12 cupcake cases and bake in the oven for 20-25 minutes or until golden and springy to the touch. Leave to cool in the tin for 5 mins before transferring to a cooling rack
Frosting Ingredients:
250g of Icing sugar (sieved)
80g unsalted butter (room temperature)
25ml milk
A couple of drops of Vanilla Extract
A couple of drops of green food colouring
Sprinkles (Hundreds and Thousands are the best)
Beat or whisk the icing sugar and butter together until it looks like sand. Gradually add milk and vanilla extract and whisk until soft and fluffy. The more you whisk the fluffier it will get. Next, add the food colouring a drop at a time– you are aiming for a pastel green. Either spoon generously on top of each cup cake or if you want to be really fancy use a piping bag. Top with Hundreds and Thousands.
